Fried rice mixed with chicken, prawns, eggs, sausages and vegetables – some commonplace, some exotic – is a meal in – one dish that is simple to prepare and delicious to eat.
Rice - 2 cups
Refined oil - 5 tablespoon
Sheeled prawns - 1 cup
Eggs - 2
Salt and pepper - to taste
Monosodium glutamate - 1/2 tsp
Button mushrooms, sliced - 5
Spring onions, sliced - 2
Boneless chicken, cooked - 250 gm
Shelled peas, cooked - 1/3
Bamboo shoots, boiled and sliced -50 gm
Soya bean sauce - 5 tablespoon
Cook the rice, strain and let cool. Heat 1 tbsp. oil.Saute the prawns till pink. Boil and slice the sausages.
Beat the eggs and season lightly with salt, pepper and monosodium glutamate. Cook 1 or 2 thin omelettes and cut into strips.
Heat the remaining oil in a karahi. Stir fry the mushrooms for a few seconds. Add the spring onions and sausages and fry stirring and turning.
Add the chicken, prawns, peas, bamboo shoots and stir fry for a minute. Sprinkle soyabean sauce, monosodium glutamate and salt.
Add the cooked rice; using the spatula to break rice chunks. Stir fry until all ungredients are mixed and the rice heated through.
Serve hot garnished with omelette strips
