Ingredients:
Lean pork (sliced thinly) – 250 gms.
Spring onions (cut finely) – 4
Capsicum (shredded) – 1
Soya sauce – 1 tbsp
Cornflour – 1 tbsp
Rice (boiled) - 2 cups
Eggs (beaten lightly) – 2
Oil – 4 tbsps
Almonds (toasted) – 100 gms.
Method: Season the pork with soya sauce and cornflour. Heat 3 tbsps oil in a pan and stirfry the pork for about 2-3 minutes. Add half the onions, capsicum and salt. Stir fry for I minute. more. Add rice, almonds, stir well and remove from flame.
Heat I tbsp oil and prepare a thin omelette with the beaten eggs. Remove from flame and cut into thin strips.
Serve the rice hot garnished with egg strips and remaining spring onions.
