Lean pork (sliced thinly) &#8211; 250 gms.<br />
Spring onions (cut finely) &#8211; 4<br />
Capsicum (shredded) &#8211; 1<br />
Soya sauce &#8211; 1 tbsp<br />
Cornflour &#8211; 1 tbsp<br />
Rice (boiled)?- 2 cups<br />
Eggs (beaten lightly) &#8211; 2<br />
Oil &#8211; 4 tbsps<br />
Almonds (toasted) &#8211; 100 gms.</p>
<p>Method: Season the pork with soya sauce and cornflour. Heat 3 tbsps oil in a pan and stirfry the pork for about 2-3 minutes. Add half the onions, capsicum and salt. Stir fry for I minute. more. Add rice, almonds, stir well and remove from flame.<br />
Heat I tbsp oil and prepare a thin omelette with the beaten eggs. Remove from flame and cut into thin strips.<br />
Serve the rice hot garnished with egg strips and remaining spring onions.</p>

Bamboo shoots (chopped) &#8211; 2<br />
Oil &#8211; 3 tbsps<br />
Soya sauce &#8211; 2 tbsps<br />
Cooking wine (vinegar) -11/2 tbsps<br />
Ajinomoto &#8211; pinchful<br />
Sugar &#8211; to taste<br />
Salt &#8211; to taste</p>
<p>Method: Marinate the pork with 1 tbsp soya sauce, 1/2 tbsp vinegar for 1 hour.<br />
Heat the oil in a large heavy-bottomed pan. Drain meat and fry until golden brown. Add the bamboo shoots, mushrooms, spinach or spring onions and seasoning. Also add rice along with 4 cups of water and bring to a boil. Simmer covered till well-cooked. Serve hot.</p>
